Sunday’s recipe drop: Lemon Raspberry Bliss Bars



If sunshine had a dessert form, it would be these Lemon Raspberry Bliss Bars. And who doesn’t need a sweet and tangy taste of sunshine in the wintertime?

They’re the kind of treat that makes you stop mid–first bite and go, “Oh wow… THAT’S good.” Bright lemon, sweet-tart raspberry, buttery shortbread — it’s basically a rom-com for your tastebuds.

These bars are gorgeous, crowd-pleasing, and dangerously easy to eat three at a time. Perfect for brunch, gifting, or impressing your coworkers so they forget you were late to the meeting again.

Think classic lemon bars… but with a juicy raspberry swirl and a buttery shortbread crust. They’re bright, tangy, and prettier than your Instagram grid.

Ingredients

Shortbread Crust:

  • 1 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 2 cups all-purpose flour

  • 1/4 tsp salt

Lemon Filling:

  • 1 1/2 cups granulated sugar

  • 1/4 cup all-purpose flour

  • 4 large eggs

  • 1/2 cup fresh lemon juice

  • 1 tbsp lemon zest

Raspberry Swirl:

  • 1/2 cup fresh raspberries

  • 1 tbsp sugar

  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9x13 pan with parchment.

  2. Mix crust ingredients until crumbly, press into the pan, and bake 15–18 minutes.

  3. Mash raspberries with sugar and lemon juice. Set aside.

  4. Whisk together filling ingredients. Pour over warm crust.

  5. Dot raspberry mixture on top and swirl with a knife.

  6. Bake 20–25 minutes until set. Cool, dust with powdered sugar, slice, enjoy.
